About the Role
As a Sous Chef specializing in Cold Kitchen, you will work closely with the Executive Chef to oversee the preparation of salads, appetizers, cold desserts, charcuterie, and other chilled dishes. This position demands precision, leadership, and a deep understanding of food safety protocols within a high-volume professional kitchen environment.
Key Responsibilities
- Prepare and present a wide variety of cold dishes, including salads, canapés, terrines, and cold sauces
- Supervise and mentor junior kitchen staff within the cold kitchen section
- Ensure all food preparation meets established quality, taste, and presentation standards
- Monitor inventory levels, place orders for fresh ingredients, and minimize food waste
- Maintain strict compliance with HACCP, food safety, and sanitation regulations
- Collaborate with the hot kitchen team to ensure seamless service during peak hours
- Develop new cold menu items and seasonal specials in coordination with the Executive Chef
- Conduct regular equipment checks and report maintenance needs promptly
Requirements
- Proven experience as a Sous Chef, Junior Sous Chef, or in a similar role within the cold kitchen section
- Strong knowledge of cold food preparation techniques, plating, and presentation
- Solid understanding of food safety standards and HACCP principles
- Ability to lead a team and work efficiently under pressure in a fast-paced kitchen
- Excellent organizational and time management skills
- Relevant culinary certification or diploma from a recognized institution
- Good communication skills in English; Arabic language skills are an advantage
