Role Summary
A Commis Chef is an essential member of the culinary team responsible for supporting daily kitchen operations in a high-volume hotel environment. This role focuses on food preparation, station management, and maintaining exceptional hygiene standards under the guidance of senior chefs. The position demands precision, speed, and a strong commitment to delivering consistent quality across all dining outlets.
Key Responsibilities
- Execute mise en place and food preparation according to standardized recipes and portion controls
- Operate assigned kitchen stations (garde manger, hot line, pastry, or butchery) during service periods
- Maintain strict adherence to HACCP food safety protocols and local municipality regulations
- Monitor ingredient freshness, rotate stock using FIFO method, and report shortages to the Chef de Partie
- Ensure cleanliness and organization of workstations, walk-ins, dry storage, and equipment
- Assist in inventory counts, receiving deliveries, and verifying product quality against specifications
- Support menu development testing and special event execution as directed by the Executive Chef
- Train and mentor kitchen stewards and junior commis on proper techniques and standards
Required Qualifications
- Culinary arts diploma or equivalent professional certification from a recognized institute
- Minimum 1-2 years experience as a Commis Chef in a 4-5 star hotel or high-volume restaurant
- Proven knowledge of international cuisines, cooking techniques, and dietary requirements
- Valid food handler certification and current health clearance for Qatar
- Ability to work flexible shifts including weekends, holidays, and split shifts
- Physical stamina to stand for extended periods and lift up to 25kg regularly

- Knife Skills: Precision cutting, butchery basics, vegetable turning, and garnish preparation
- Cooking Methods: Grilling, sautéing, roasting, braising, steaming, and sous-vide fundamentals
- Kitchen Systems: Micros/Oracle POS, recipe management software, inventory control platforms
- Languages: English fluency required; Arabic or Tagalog advantageous for team communication
- Soft Skills: Time management, multitasking under pressure, teamwork, adaptability, attention to detail
