DOMINO RH, a leading HR services provider in Morocco, is seeking an experienced Sous-Chef Pâtissier for a prestigious establishment in Casablanca. This role is ideal for a creative and detail-oriented pastry professional who thrives in a fast-paced kitchen environment. As a Pastry Sous Chef, you will oversee the pastry section, ensuring high-quality desserts and baked goods while supporting the Head Pastry Chef in menu development and team management.
Tasks and Responsibilities
- Supervise daily pastry production, including cakes, pastries, breads, and desserts, maintaining consistency and quality.
- Assist in creating and updating dessert menus, incorporating seasonal ingredients and current trends.
- Train and mentor junior pastry staff, ensuring adherence to recipes and hygiene standards.
- Manage inventory of pastry ingredients, ordering supplies as needed to avoid shortages.
- Ensure all pastry stations comply with food safety and sanitation regulations.
- Collaborate with the culinary team to coordinate dessert service with other kitchen sections.
- Participate in cost control by minimizing waste and optimizing ingredient usage.
Requirements and Qualifications
- Minimum 3 years of experience as a Pastry Chef or Sous-Chef Pâtissier in a high-volume restaurant, hotel, or patisserie.
- Professional culinary degree or diploma in pastry arts or related field.
- Strong knowledge of classical and modern pastry techniques, including chocolate work, sugar art, and plated desserts.
- Ability to lead a team and work under pressure during peak service hours.
- Excellent organizational and time-management skills.
- Fluent in French or English; Arabic is a plus.
- Valid work authorization for Morocco.
