As a Pastry Sous Chef, you will oversee the pastry section, ensuring high-quality desserts and baked goods while supporting the Head Pastry Chef in menu development and team management.

Tasks and Responsibilities

• Supervise daily pastry production, including cakes, pastries, breads, and desserts, maintaining consistency and quality.
• Assist in creating and updating dessert menus, incorporating seasonal ingredients and current trends.
• Train and mentor junior pastry staff, ensuring adherence to recipes and hygiene standards.
• Manage inventory of pastry ingredients, ordering supplies as needed to avoid shortages.
• Ensure all pastry stations comply with food safety and sanitation regulations.
• Collaborate with the culinary team to coordinate dessert service with other kitchen sections.
• Participate in cost control by minimizing waste and optimizing ingredient usage.

Requirements and Qualifications

• Minimum 3 years of experience as a Pastry Chef or Sous-Chef Pâtissier in a high-volume restaurant, hotel, or patisserie.
• Professional culinary degree or diploma in pastry arts or related field.
• Strong knowledge of classical and modern pastry techniques, including chocolate work, sugar art, and plated desserts.
• Ability to lead a team and work under pressure during peak service hours.
• Excellent organizational and time-management skills.
• Fluent in French or English; Arabic is a plus.
• Valid work authorization for Morocco.
