As a Chef de Partie (Pastry), you will play a key role in the
preparation and execution of high-quality pastries and desserts
for our guests. You will manage your designated section of the
kitchen, ensuring the efficient and smooth operation of pastry
preparation, production, and presentation, while maintaining the
standards of quality, cleanliness, and safety. Key
Responsibilities: Pastry Preparation: Prepare, bake, and
assemble a variety of pastries, desserts, breads, and other baked
goods according to recipes and menu specifications. Menu
Development: Collaborate with the Pastry Chef or Executive Chef
to develop new pastry items, keeping up with trends and seasonal
ingredients to create unique offerings. Quality Control: Ensure
the highest quality of all pastry products, maintaining
consistent portioning, presentation, and taste across all dishes
served. Stock Management: Monitor inventory levels for pastry
ingredients and supplies, and assist in ordering or purchasing
when necessary. Ensure that all ingredients are stored properly
and used before expiration. Team Collaboration: Supervise and
mentor junior pastry team members, providing guidance on
techniques, portioning, and presentation. Ensure smooth
communication between sections. Hygiene & Safety: Maintain a
clean and organized pastry station, following all food safety and
hygiene regulations. Ensure that all equipment is properly
cleaned and stored after use. Service Support: Ensure all pastry
items are prepared and ready for service, coordinating with other
kitchen teams to meet guest orders in a timely manner. Training:
Assist in the training of new pastry staff, demonstrating proper
techniques and maintaining a high standard of work within the
kitchen.
